Tomato Chicken

Ingredients:

1 lb skinless, boneless chicken breast
1 ½ lb diced tomatoes
1 small can tomato puree
6 Tbs olive oil
1 tsp salt
Black Pepper
1 Tbs Worcestershire sauce
1 small onion; diced
1 red pepper; sliced
3 tsp thyme
½ C chopped parsley




Directions:

1.Preheat the oven to 450 F.

2.In a bowl, mix the oil and tomatoes together; season with salt and pepper.

3.Take skillet and heat some oil over medium heat. Add the seasoned tomatoes, peppers, onions, thyme and the tomato puree and stir till diced tomatoes become tender.

4.Then remove from heat and add in the Worcestershire sauce. Set aside.

5.Meanwhile, season the chicken with salt and pepper and then sear each side of the chicken for 8 minutes in another skillet.

6.When the chicken is ready, pour the tomato mixture over the chicken stir and stick the entire skillet into the oven for 10 more minutes until chicken is cooked through.

7.Garnish with some chopped parsley and serve!
