4 C. cold water
1 C. ground grits
3 Tbs. softened butter
1 lb. fresh shrimp, peeled
1 lb. beef, minced
4 tsp. freshly squeezed lemon juice
2 Tbs. parsley, chopped
1 C. scallions, sliced
1 garlic clove, chopped
1 flour tortilla, baked
Salt and pepper
Directions:
1.Add water to a small pot. Boil and add salt, pepper, and grits. Cook until grits absorb water, at least 25 minutes. Remove from heat and mix in butter.
2.Rinse shrimp off and dry. In a small skillet, heat oil and add beef; cook until tender. Add shrimp, and cook until just barely pink. Add lemon juice, parsley, scallions, and garlic. Sauté over high heat for no more than 3 minutes.
3.Spoon grits, meat, and shrimp onto a cooked tortilla. Serve warm.
