Fried Catfish

Ingredients:

1 qt. oil
1 C. cornmeal
1 C. flour
1 tsp. seafood seasoning
½ tsp. salt
¼ tsp. paprika
¼ tsp. pepper
2 catfish fillets
¾ C. buttermilk
1 lime
1 bag brown potatoes





Directions:

1.In a large oven, heat oil over high heat until 350 F. is reached.

2.In a large bowl, mix cornmeal and flour. Add seasoning, salt, paprika, and pepper. Toss in catfish and coat well. Pour buttermilk over fish and flip until fish is evenly coated. Set aside for 5 minutes.

3.Add fillets to oil and fry until lightly golden, no more than 6 minutes. Remove and let cool. Serve with potatoes and sliced lime.
