Southern Style Black-Eyed Peas

Ingredients

8 Ounces Dried Black-eyed Peas
4 Cups Water
2 Cups Water
2 Ounces Cooked, smoked lean ham, diced
1 Green Onion, Finely chopped
1/4 Teaspoon Salt
1 Fresh Serrano Chile Pepper, seeded and thinly sliced
2 Cups of White Long Grain Rice





Directions:

1.Start by rinsing black-eyed peas with cold water.

2.Combine peas and the 4 cups water in a large saucepan.

3.Bring to a boil, then reduce heat.

4.Let simmer for 2 minutes, then remove from heat.

5.Cover and let stand for 1 hour.

6.Put on pot of white long grain rice and cook for about an hour.

7.Drain and rinse peas, then drain again.

8.Return peas to saucepan and stir in the 2 cups water, ham, onion, salt, and serrano pepper.

9.Bring to a boil and reduce heat to medium/low.

10.Cover and simmer for about an hour or until peas are tender.

11.Serve with rice and beans on top.
