4 potatoes; cut into chunks
4 boneless, skinless chicken breast
Salt
Pepper
Chopped parsley
Olive Oil
Directions:
1.Preheat the oven to 350F. Prepare a baking pan lined with some tin foil.
2.Put the cut potatoes into the pan and season with olive oil, salt and pepper. Ensure that the potatoes are well coated.
3.Then stick them in the oven for about 1 hour or until potatoes are soft.
4.Just before the potatoes are about done, you can start cooking the chicken.
5.In a pan, heat some oil on medium heat. Season the chicken with some salt and pepper.
6.Then carefully lower the meat into the hot pan and cook each is side for about 5-10 minutes until it is cooked through.
7.When it is ready, place it neatly on a serving plate and serve with a side of the roasted potatoes. Sprinkle on some chopped parsley as garnish.
