2 packages frozen butter beans, about 1 1/2 pounds
12 to 16 ounces andouille sausage
2 cups water
2 cups chicken broth or vegetable broth
1 large bell pepper, chopped
1 large onion, chopped
1 1/2 to 2 teaspoons Creole seasoning, or to taste
How to Make It:
1.In a slow cooker, combine the butter beans, sliced andouille sausage, water, broth, bell pepper, and onion.
2.Cover and cook on LOW for 6 hours.
3.Add Creole seasoning and continue cooking for 2 hours longer, or until beans are tender.
4.Serve with cornbread for a delicious, comforting meal.
