Roasted Potatoes with Smoky Tomato Sauce:
Roasted Potatoes:
2lbs potatoes, roughly cubed
1 tbsp olive oil
1 tsp garlic powder
2 tsp smoked paprika
salt and pepper
Smoky Tomato Sauce
1 tbsp olive oil
1 Spanish onion, finely diced
1 clove garlic, minced
1 tsp dried oregano
1 tsp fennel seeds
1/4 tsp smoked paprika
1 14oz can diced tomatoes, drained
1 tbsp sherry vinegar
salt and pepper
Directions:
1.On a baking sheet toss potatoes with olive oil, garlic powder, paprika, salt and pepper to taste.
2.Roast at 400F, stirring occasionally, for 45 min or until golden and crispy.
3.In a skillet heat olive oil and sauté onions until softened. Add garlic, oregano, fennel seeds, smoked paprika and diced tomatoes and cook until sauce begins to reduce.
4.Remove from heat and stir in sherry vinegar.
5.Season with salt and pepper.
6.Serve chunky or blend with immersion blender.
7.Pour sauce over potatoes just before serving.Store for up to 4 days in the fridge.
