1 tbsp. butter
Juice of 2 limes, divided
1/2 tsp. kosher salt
1 c. basmati rice
2 c. water
1 tbsp. freshly chopped cilantro
DIRECTIONS:
1.In a large saucepan over low heat, melt butter. Add juice from one lime, salt, and rice, stirring for one minute to coat. Add water and bring to a boil.
2.Once boiling, cover and reduce to a simmer, cooking over low heat until rice is tender, 22 to 25 minutes.
3.Fold in cilantro, garnish with more lime juice and serve.
