4 Tbsp Butter
2 Tbsp Olive Oil
1 cup Brown Rice
2½ cups Chicken Broth
Salt & Pepper
8 Lamb Rib Chops
Directions:
1.Warm up the 2 tablespoons butter with 1 tablespoon olive oil in a skillet over medium heat. Add in the rice and 2 1/2 cups of chicken broth. Cover the rice with salt and pepper and place a lid on the pot. Let the rice come to a boil and then lower down the heat and let it simmer for 15 minutes.
2.Preheat the broiler and cover the lamb chops with the leftover 1 tablespoons olive oil, salt, and pepper. Place the lamb chops in the broiler and cook them for 5 minutes until they have browned, Make sure to turn the lamb chops over once. Serve the lamb chops on top of the prepared rice.
