BARBECUED PORK STEAK

Ingredients:

1 tsp Olive Oil
½ White Onion, chopped
2 Shallots, chopped
6 Garlic Cloves, minced
1 tsp Ginger, minced
1 tsp Ancho Powder
1 bottle Dark Beer
1 tsp Worcestershire Sauce
½ cup Ketchup
¼ cup Yellow Mustard
1 tsp Fresh Thyme
1 tsp Fresh Basil
1 tsp Fresh Parsley
3 cup Chicken or Vegetable Broth
½ cup Brown Sugar
4 Thinly Sliced Pork Steaks, Bone-in
Salt (to Taste)
Pepper (to Taste)


Directions:

1.First, make the barbecue sauce for the pork steaks. Heat olive oil in a cast iron skillet. Add in onion and shallots and cook until tender and translucent. Continue mixing in ingredients with garlic cloves, ginger, and ancho powder. Cook for another 1-2 minutes. Add in beer cook down for 5 minutes. Add in Worcestershire sauce, ketchup, yellow mustard, thyme, basil, parsley, brown sugar, and 2 cups of broth. Let the ingredients come to a simmer for 15 minutes. If the sauce is too thick after the 15 minutes thin out with the remainder of the broth. Pour the sauce into a heat resistant bowl and set aside.

2.Salt and pepper the pork steaks to the desired taste and cook in the cast iron skillet the sauce was previously over medium-high heat. Let the steaks cook for 6-8 minutes on each side, basting with the barbecue sauce at various times during the cooking process. Let sit for 5 minutes before serving with the remainder of the sauce.
