Ingredients:
Toppings
• ½ cup BBQ sauce (or more according to preference)
• 2 cups mozzarella cheese, shredded
• 2 large grilled chicken breasts, sliced
• 1 pineapple, sliced into rings
• ½ cup sliced red onions
• ¼ cup green onions
• ½ cup ranch
Pizza Dough
• *or store bought pre-made dough as an alternative
• ¾ cup warm water
• ½ teaspoon active dry yeast
• 2 cups flour (bread or all-purpose works well here)
• 3 tablespoons olive oil
Directions:
1.To prepare the dough, place the warm water in the bowl of a stand mixer. Sprinkle the yeast on top and let bloom, about 10 minutes. Add the flour, salt, and olive oil to the yeast mixture and turn the mixer (fitted with the dough hook) to medium. Knead until the dough comes together to form a smooth dough. Remove dough to an oiled bowl and place a damp cloth over. Let rise for one hour, or until doubled in bulk. When the dough has doubled, punch it down.
Directions:
2.To grill chicken breasts, season with salt, pepper, and oil. Heat cast iron pan over medium heat and cook chicken breasts 5-6 minutes per side reaching an internal temperate of 160° to 165° F. Once finished, let rest then slice and set aside. To grill the pineapple rings, first slice pineapple into ½ inch rings. Place on cast iron skillet and grill for about 2-3 minutes per side on medium heat. Slice and then set aside.
Directions:
1.To cook the pizza, preheat the oven to 500 degrees. Roll the dough out on a well-floured surface to a 12-inch circle and place on a pizza stone or pan. Spread BBQ sauce evenly on dough and top with mozzarella cheese, grilled chicken slices, grilled pineapple slices, and onions.
2.Bake for 10 minutes or until the dough is golden and the cheese has melted. Add chopped green onions, drizzle ranch dressing over the pizza before serving and enjoy!
