Fried Chicken Sliders with Sriracha Mayo

Ingredients:

• 1 lb. chicken thighs
• 2 cups buttermilk
• 1 ½ cups flour
• 1 tsp. smoked paprika
• 1 tsp. onion powder
• 1 tsp. chipotle chili pepper
• Salt & pepper, to taste
• Canola oil for frying
• Slider buns
• Pickles

Sriracha Mayo:

• ½ cup mayo
• 1 tbsp. Sriracha
• 1 tsp. honey
• ½ tsp. red wine vinegar
• ½ tsp. garlic powder
Cut each thigh in half to reduce size. Remove any fat/gristle. Place in a bowl and cover with the buttermilk. Cover and refrigerate for a few hours (can refrigerate for up to one day).


Directions:

1.Make the sauce by combining the sauce ingredients together with a spoon. Keep in the fridge until you’re ready to use it. Add the smoked paprika, onion powder, garlic powder, chipotle chili pepper, salt, and pepper to the flour and stir it in.

2.Heat about ½ inch of canola oil in a heavy pot on medium-high heat. To test if the oil is hot, drop a little flour in and see if it sizzles (a thermometer should read between 350-375F). Add the chicken pieces in one at a time (take a piece of chicken out of the buttermilk, coat in flour, place in pan, repeat). Cook for about 5 minutes/side or until crispy golden brown. Try not to overcrowd the chicken. Use tongs to turn the chicken.

3.Butter a skillet and place buns down for a few minutes to toast. Assemble sliders by adding the mayo, chicken, and pickles. Enjoy!
