INGREDIENTS:
1 package frozen rice, microwaved according to package directions
1/4 Tsp. kosher salt
Juice of 5 limes
1/3 c. chopped fresh cilantro
2 cloves garlic, minced
1 Tsp. ground coriander
Zest of 2 limes
1 Tsp. honey
1 Tbsp. soy sauce
1/2 Tsp. crushed red chili flakes
1 lb. shrimp, peeled and deveined
1 Tbsp. butter
1 avocado, sliced
DIRECTIONS:
1. Stir microwaved rice with salt, juice, and cilantro until combined. Set aside.
2. Prep shrimp: In a large bowl, combine garlic, coriander, lime zest, honey, soy sauce, lime juice, and crushed red pepper flakes and whisk. Add shrimp and toss until combined.
3. In a large skillet over medium-high heat, melt butter. Add shrimp with marinade and cook until fully pink and marinade cooks off by at least half.
4. Assemble rice bowls by topping rice with shrimp, avocado, and pan juice.
