Ingredients:
Freshly shucked oysters (medium sized oysters are great for frying)
4 cups of bread flour
¼ cup baking powder
Egg whites (Egg Beaters will work also)
Canola for Frying
Directions:
1.Drain oysters, do not rinse oysters. In a large bowl add flour, baking powder and mix well, place about 1 ½ cups of flour mixture in a plastic bag. In another bowl add egg whites, about one cup to start, and add additional egg whites as needed. Place drained oysters in the plastic bag, with the flour mixture, a few at a time, seal the top of the bag and mix oysters in flour mixture. Give the bag a couple of good shakes. Shake off the excess flour from the oysters as you remove them from the plastic bag. Place the oyster in the egg whites, and coat all sides with the egg whites. Now place the oyster in the flour mixture in the bowl. Coat all sides of the oyster with the flour mixture. Remove oyster from flour and place on a plate, allow oysters to set for at least 5 minutes before frying.
2.Heat canola oil in a deep fat fryer or large pot, to 330 degrees Fahrenheit, when oil reached 330 degrees, start frying oysters, place oysters in oil, a few at a time, allow oysters to fry for 3 minutes, then turn them over and fry for 1 minute. Your oysters are done, remove from oil, and allow oysters to drain on a rack for a couple of minutes. Your oysters are ready to eat, so get out your favorite tartar sauce, and lemon, hot sauce and dig in.
