Steak With Garlic Butter

Ingredients:

1-inch thick ribeye steak, 1-2 pounds
2 tablespoons Kosher salt
2 tablespoons freshly ground black pepper
4 tablespoons canola oil
3 tablespoons butter
2 sprigs thyme
2 bunches rosemary
2 cloves garlic, crushed





Preparation:

1. Preheat oven to 250°F.

2. Season the steak evenly with the salt and pepper on all sides.

3. Place the steak on a wire rack on top of a baking sheet. Bake for 35 minutes.

4. Heat the canola oil in a skillet or stainless steak pan over high heat until smoking. Sear the steak on one side for 30 seconds, then flip. Immediately, add the butter, thyme, rosemary, and garlic, swirling the pan to melt the butter quickly.

5. Place the herbs and garlic on top of the steak, and push the Steak towards the top of the pan. Tilt the pan towards you to pool the butter near the bottom. Using a spoon, continuously scoop the butter over the top of the steak for about 30-45 seconds. This helps not only flavor the steak but also helps cook the steak faster. If you prefer your steak medium or medium-well, cook your steak longer.

6. To test the doneness of your steak, lightly press the tip of your left index finger to the tip of your left thumb. The fleshy area below the thumb should feel like what rare steak feels like when pressing the surface of the steak. For medium rare steak, touch your middle finger to your thumb and press the area below your thumb. For medium, touch your fourth finger to your thumb. For well done, touch your pinky to your thumb.

7. Rest the steak for 10 minutes on a cutting board. Slice, then serve!




Prime Rib with Garlic Herb Butter

PRIME RIB WITH GARLIC HERB BUTTER
Servings: 7-9

INGREDIENTS:

1 cup butter, softened
7 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, finely chopped
2 tablespoons salt
1 tablespoon pepper
5-7 pound boneless ribeye roast, trimmed
2 tablespoons flour
2 cups beef stock
Mashed potatoes, to serve
Green beans, to serve


PREPARATION:

1.Preheat oven to 500°F/260°C.

2.Mix together the butter, garlic, herbs, salt, and pepper in a bowl until evenly combined.

3.Rub the herb butter all over the rib roast, then place on a roasting tray with a rack.

4.Bake for 5 minutes per pound of meat, so a 5-pound roast would bake for 25 minutes, and a 7-pound roast would bake for 35 minutes.

5.Turn off the heat and let the rib roast sit in the oven for 2 hours, making sure you do not open the oven door or else the residual heat will escape.

6.Once the 2 hours are up, remove the roast from the pan and pour the pan drippings into a saucepan over medium heat.

7.Add the flour, whisking until there are no lumps, then add the beef stock, stirring and bringing the sauce to a boil.

8.Remove from heat and strain the sauce into a gravy dish.

9.Carve the prime rib into ¾-inch slices, then serve with the mashed potatoes, green beans, and sauce and Enjoy!


French Pepper Steak (Steak au Poivre)

INGREDIENTS:

2 tablespoons coarsely ground black pepper
2 teaspoons kosher salt
1 14-ounce New York strip steak (or another steak of good quality)
1 tablespoon vegetable oil
2 tablespoons butter
1 cup cream
⅓ cup brandy or cognac
1 tablespoon dijon mustard







PREPARATION:

1.Liberally season the steak with salt and coarsely ground black pepper, being sure to generously coat the entire surface of the meat. Using your hands, press the seasoning into the meat create an even coating.

2.Heat vegetable oil and 1 tablespoon of butter in a large skillet over medium-high heat until just smoking. Add the steak to the pan and sear on one side for 4 minutes. Turn and sear the other side for another 4 minutes, for medium-rare. If steak has a fat-cap, be sure to sear it as well for 30 seconds to a minute. Once cooked to desired doneness, transfer steak to a cutting board to rest.

3.Reduce heat to medium and add brandy. Allow brandy to cook down for about 1 minute while using a whisk to scrape off any browned bits leftover in the bottom of the pan.

4.Once brandy has reduced by half, add cream and continue to whisk until combined. Add dijon mustard and butter and continue to cook until mixture begins to reduce and thicken, about 5-7 minutes. The final pan sauce should have a rich consistency and coat the back of a spoon. Reduce heat to low and reserve.

5.Once rested slice steak into ½-inch pieces. Pour cream sauce over the top and serve and Enjoy!


8 One-Pot Pastas

One-Pot Lemon Garlic Shrimp Pasta
Servings: 4

INGREDIENTS:

8 ounces linguine
2 tablespoons olive oil
8 tablespoons (1 stick) unsalted butter
4 cloves garlic, minced
1 teaspoon crushed red pepper
1 ¼ pounds large shrimp
Salt, to taste
Pepper, to taste
1 teaspoon dried oregano
4 cups baby spinach
6 tablespoons butter
1/4 cup parmesan
1 tablespoon parsley
1 tablespoon lemon


INSTRUCTIONS:

1.In a large pot, boil water and add pasta. Cook (stirring frequently) until al dente.

2.Drain and set aside pasta.

3.In the same pan, heat 1 tablespoon of olive oil and 1 tablespoons of butter. Add garlic and crushed red pepper, cook until fragrant.

4.Toss in shrimp, salt, and pepper to taste, and stir until shrimp start to turn pink, but are not fully cooked.

5.Add oregano and spinach, cook, until wilted.

6.Return cooked pasta to the pot, add remaining butter, parmesan, and parsley. Stir until well mixed and the butter is melted.

7.When the shrimp are cooked, add lemon juice, mix once more, then serve while hot and Enjoy!



One-Pot Swedish Meatball Pasta
Servings: 4

INGREDIENTS
1 pound ground beef
½ cup seasoned bread crumbs
½ finely minced onion
1 egg
½ tablespoon salt (for meatballs)
½ tablespoon pepper (for meatballs)
2 tablespoons canola oil
2 cups beef broth
2 cups milk
½ tablespoon salt (for sauce)
½ tablespoon pepper (for sauce)
1 tablespoons Worcestershire sauce
4 cups egg noodles
1 cup shredded parmesan cheese
½ cup chopped parsley


PREPARATION
1. In a large bowl, combine the ground beef, breadcrumbs, onion, egg, salt, and pepper, mixing until evenly combined.
2. Heat the canola oil in a pot over medium-high heat. Take about a golf ball-size of the meatball mixture and roll it into balls. Place the meatballs into the pot, cooking for one minute. Flip the meatballs.
3. Add the beef broth, milk, salt, pepper, and Worcestershire sauce and give it a stir.
4. Bring the liquid to a boil, then add the egg noodles.
5. Stir constantly until the pasta is cooked and the liquid has reduced to a sauce that coats the noodles, about seven to eight minutes.
6. Add the parmesan and the parsley, stirring until the cheese is melted.

One-Pot Pasta Primavera
Servings: 4

INGREDIENTS
4 cups broth of your choice
10 ounces uncooked linguine
10 ounces broccoli florets
1 pound asparagus, chopped into 1-inch pieces
1 small onion, diced
4 cloves garlic, minced
½ teaspoon red pepper flakes
Salt, to taste
Pepper, to taste
1 teaspoon olive oil
4 ounces mushrooms, sliced
¼ cup heavy whipping cream
½ cup parmesan cheese, grated
3 tablespoons fresh parsley, finely chopped


PREPARATION
1. In a pot over high heat, combine broth, linguine, broccoli, asparagus, onion, garlic, red pepper flakes, salt, pepper, and olive oil. Stir.
2. Add the mushrooms and bring to a boil.
3. Once at a boil, reduce heat to medium and cook the pasta for 10 minutes, continuously tossing with tongs.
4. Add the heavy cream, parmesan cheese, and parsley, and toss for an additional 3 minutes.
5. If the liquid hasn’t been completely absorbed, let the pasta sit off the heat for an additional few minutes.
6. Enjoy!

One-Pot Cheesy Taco Pasta
Servings: 10-12

INGREDIENTS
1 pound ground beef
1 (15 oz) can diced tomatoes
1 (15 oz) can whole kernel corn
1 (15 oz) can tomato sauce
2 cups water
1 package taco seasoning
Salt, to taste
Pepper, to taste
2 cups uncooked elbow macaroni
1 ½ cups Colby jack cheese


PREPARATION
1. In a large quart pot over medium-high heat brown the ground beef. Drain fat and return beef to the pot.
2. Add taco seasoning, water, diced tomatoes, corn, and tomato sauce. Bring to a boil.
3. Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15
minutes (until pasta is cooked through). Stir occasionally.
4. Remove from heat. Sprinkle cheese on top and cover.
5. Serve once the cheese is melted! Enjoy!



One-Pot Chicken Fajita Pasta
Servings: 3-5

INGREDIENTS
3 tablespoons oil
3 chicken breasts, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
1 teaspoon salt
1 teaspoon pepper
1 tablespoon chili powder
1 tablespoon cumin
1 tablespoon garlic powder
5 cups milk
4 cups penne pasta
1 cup pepper jack cheese, shredded


PREPARATION
1. Heat oil in a large pot over high heat.
2. Add chicken and cook until no pink is visible, then take the chicken out.
3. Add the bell peppers and onion, cooking until the onion is translucent.
4. Add the chicken back to the pot with salt, pepper, chili powder, cumin, and garlic powder, stirring until evenly coated.
5. Add the milk and the penne, stirring constantly to prevent any pasta from sticking.
6. Cook for about 8-10 minutes until pasta is cooked and the milk has reduced to a thick sauce that coats the pasta.
7. Add the cheese and mix until melted.

Creamy Mushroom Chicken Pasta

INGREDIENTS:
Servings: 4

3 tablespoons olive oil

1½ pound (750 grams) chicken breasts

½ yellow onion, diced

Salt, to taste

Pepper, to taste

2 cups cremini mushrooms

3 cloves garlic, minced

1 teaspoon thyme

2 teaspoon paprika

4 cups chicken broth

1 cup heavy cream

1 pound (500 grams) farfalle pasta

5 ounces (150 grams spinach)

1 cup parmesan


PREPARATION:

1. Heat 2 tablespoons olive oil in a large pot on medium heat. Add chicken and brown, making sure to cook through. Set chicken aside.

2. Add 1 tablespoon olive oil and the onion into the pot and stir. Cook down for 1-2 minutes.

3. Add mushrooms and garlic, and stir to incorporate with the onion. Season with salt and pepper to taste as well as thyme and paprika. Stir to evenly season.

4. Add chicken broth and heavy cream to the pot and stir. Bring to a boil, then add the farfalle pasta.

5. Cook according to package instructions, being sure to stir every 1-2 minutes to keep the pasta from clumping together. (Cook time may be a little longer in this recipe than when the pasta is boiled in water.)

6. When the farfalle pasta is al dente, add the spinach and chicken and stir until the spinach cooks down and incorporates. Add parmesan and stir until it’s well-incorporated and you’re left with a smooth sauce.

7. Top off with extra parmesan.

Chicken Spinach Bacon Alfredo

Ingredients:

6 strips bacon, chopped
2 chicken breasts, sliced
5 ounces spinach
4 cloves garlic, chopped
2 teaspoons salt
1 teaspoon pepper
5 cups milk
1 pound dry penne pasta
1 cup Parmesan, grated


Preparation:

1. Cook the bacon in a large pot over medium-high heat until crispy.

2. Add the chicken and cook until no pink is showing. Remove the chicken.

3. Cook the spinach, garlic, salt, and pepper with the bacon until the spinach has wilted.

4. Put the chicken back in, add the milk, then stir.

5. Bring the milk to a boil, then add the pasta.

6. Stir constantly for about 10 minutes until the pasta is cooked.

7. Add the Parmesan, then mix until the cheese has melted. Enjoy!


Garlic Tomato Shrimp Pasta

Ingredients:

1 pound spaghetti
3 tablespoons olive oil
1 pound shrimp, peeled and deveined
2 teaspoons salt
1 ½ teaspoons red pepper flakes
1 small yellow onion
8 cloves garlic, finely chopped (about 3 tablespoons)
42 ounces canned diced tomatoes, drained of excess water
1 teaspoon sugar
1 teaspoon oregano
1 cup dry white wine
1/3 cup fresh parsley, chopped


Preparation
1. In a large pot or Dutch oven, bring 4 quarts of salted water to a boil over medium-high heat.

2. Add spaghetti, cook about 6-7 minutes until al dente. Drain and set aside.

3. Return the Dutch oven to the stovetop and heat 2 tablespoons of olive oil over medium heat.

4. Add the shrimp, salt, and ½ teaspoon of the red pepper flakes. Spread evenly across the bottom of the pot and cook until the bottom of the shrimp is pink and slightly brown, 45-60 seconds. Flip and repeat until shrimp are just cooked through.

5. Remove the shrimp and place in a small bowl to the side. Reduce heat to medium/low and add additional 1 tablespoon of oil to the pot, as needed.

6. Add onion and garlic to the oil and cook until onions have softened about 3-5 minutes. Stir frequently to ensure the garlic does not burn.

7. Add the diced tomatoes, remaining 1 teaspoon of salt, sugar, remaining 1 teaspoon red pepper flakes, oregano, and white wine. Stir and bring the sauce up to a simmer. Simmer for 5-10 minutes until the sauce has thickened.

8. Return the shrimp (and any accumulated juices) to the sauce. Add the parsley, stir to incorporate.

9. Add the cooked spaghetti back into the pot, toss until evenly coated and heated, remove from heat, serve immediately. Enjoy!

THE ULTIMATE ROAST POTATOES
Servings: 5-6

INGREDIENTS:

13 4-lb russet potatoes, cut into 1-inch pieces
1 teaspoon baking soda
1 teaspoon salt
¼ cup olive oil
2 tablespoons garlic, minced
2 tablespoons rosemary, finely chopped
1 teaspoon black pepper
More salt & pepper to taste

Small handful fresh parsley leaves, minced to garnish





PREPARATION:

1.Preheat oven to 425°F/220°C.

2.Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir. Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.

3.Combine olive oil, rosemary, garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes. Immediately strain oil through a fine-mesh strainer over the potatoes.

4.Add salt and pepper to taste, and mix.
Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.

5.Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly. Transfer to oven and roast, without moving, for 30-35 minutes. Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.

6.Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley.

7.Toss to coat and season with more salt and pepper to taste. Serve immediately.



One-Pan Roasted Veggies 4 Ways

Herb-Roasted Sweet Potatoes
Servings: 4-5

INGREDIENTS:

3 sweet potatoes
2 tablespoons oil
1 tablespoon rosemary
1 teaspoon salt
1 teaspoon pepper





PREPARATION:

Preheat oven to 400°F/200ºC.
Slice the top and bottom off of the sweet potatoes, and slice potatoes in half lengthwise. Rest each half on the broader end, then slice 3 times vertically and horizontally. Turn the potatoes on their side and make 4 or five more slices, to form cubes.
On a prepared baking sheet, combine sweet potatoes and remaining ingredients. Mix evenly.
Bake for 35-40 minutes.
Allow cooling for 5 minutes.

Garlic-Parmesan Roasted Broccoli
Servings: 4-5

INGREDIENTS:

3 heads broccoli
2 tablespoons oil
1 tablespoon lemon juice
¼ cup vegetarian parmesan
2 teaspoons garlic powder
½ teaspoon red pepper flakes
1 teaspoon salt
1 teaspoon pepper






PREPARATION:

Preheat oven to 400°F/200ºC.
Separate the crowns and snip off any leaves of the broccoli.
On a prepared baking sheet, combine broccoli and remaining ingredients. Mix evenly.

Paprika-Herb Carrots
Servings: 4-5

INGREDIENTS
4-5 carrots
2 tablespoons oil
2 teaspoons paprika
¼ cup parsley
1 teaspoon salt
1 teaspoon pepper





PREPARATION:
Preheat oven to 400°F/200ºC.
Slice the top and bottom off of the carrots (hold knife diagonally while slicing to make fancy carrot slices).
On a prepared baking sheet, combine carrots and remaining ingredients. Mix evenly.
Bake for 20-25 minutes.
Allow cooling for 5 minutes.

Honey-Balsamic Roasted Brussels Sprouts
Servings: 4-5

INGREDIENTS:

1½ pounds Brussels sprouts
2 tablespoons oil
2 tablespoons balsamic vinegar
2 teaspoons honey
1 teaspoon salt

PREPARATION:

Preheat oven to 425°F/220ºC.
Slice the stem off of the Brussels sprouts and then halve them.
On a prepared baking sheet, combine Brussels sprouts and remaining ingredients. Mix evenly.

Fried Chicken From Around the World


INGREDIENTS:

6 chicken drumsticks & thighs, bone-in


Marinade:
2 teaspoons salt
1 teaspoon pepper
1 teaspoon oregano
1 teaspoon paprika
1 teaspoon white pepper
1 teaspoon garlic powder
2 cups buttermilk


Breading:
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon cayenne pepper


Oil, for frying


PREPARATION:

1.Combine the chicken with all the marinade ingredients in a large bowl. Stir to make sure each piece of chicken is coated evenly, then cover with cling film and chill for about an hour.

2.Combine all of the breading ingredients in a large bowl, then roll the marinated chicken pieces in the flour, shaking off excess. Repeat with the rest of the chicken.
Heat oil in a skillet over high heat to about 350°F.

3.Fry 3-4 pieces at a time for about 15-20 minutes until the breading is dark golden brown, flipping several times to ensure the breeding cooks evenly and does not burn. The heat of the oil should drop to about 320°F.

4.Drain the chicken on paper towels or on a wire rack, resting for about 10-15 minutes.
Serve!



Brazilian Chicken Wings (Franco À Passarinho)

INGREDIENTS:

10 chicken wings & drumettes
6 cloves garlic, finely minced
2 teaspoons salt
1 teaspoon pepper
¼ cup lime juice
1 cup flour
Oil, for frying
Lime wedges and fried chopped garlic to serve


PREPARATION:

Combine the chicken with the garlic, salt, pepper, and lime juice in a bowl until evenly coated. Cover with cling film and refrigerate for about an hour.
Dip each chicken wing in the flour, shaking off excess.
Heat oil in a large pot to about 375°F.
Fry half of the chicken wings at a time until dark golden brown. The oil temperature will drop to about 350°F.
Drain on paper towels.
Serve with lime wedges and fried garlic!




Japanese Popcorn Chicken (Karaage)
Serves 2-3


INGREDIENTS:

3 boneless chicken thighs, chopped into 1-inch chunks
3 cloves garlic, finely minced
2 tablespoons ginger, finely grated or minced
3 tablespoons soy sauce
2 tablespoons sake
1 tablespoon sesame oil
1 tablespoon sugar
½ cup potato starch
Oil, for frying
Lemon wedges and parsley to serve


PREPARATION:

Combine the chicken with the garlic, ginger, soy, sake, sesame oil, and sugar in a bowl until evenly coated. Cover and refrigerate for about 1 hour.
Heat oil in a pot over high heat until about 340°F.
Give the chicken a stir to re-incorporate the marinade, then sprinkle the potato starch on top. Lightly toss until somewhat combined, but do not mix until each chicken piece is evenly coated because the uneven pockets of potato starch will give the chicken its signature unique texture.
Fry half of the chicken at a time, until lightly golden and bubbly, about 5-7 minutes. The oil temperature will drop to about 320°F. Rest the chicken on paper towels and increase the heat.
Heat oil to about 390°F, then fry the chicken again for about 2-3 minutes until golden brown. Drain the chicken on paper towels.
Serve with lemon and parsley!




Spicy Korean Chicken


INGREDIENTS:

10 chicken wings and drumettes
1 cup cornstarch
Oil, for frying
Sesame seeds, for serving


Batter:
½ cup cornstarch
½ cup flour
2 teaspoons salt
1 cup water


Sauce:
2 tablespoons soy sauce
¼ cup honey
2 tablespoons rice vinegar
2 tablespoons Korean chili paste (gochujang)
2 cloves garlic, minced
1 tablespoon ginger, grated


PREPARATION:

Mix the ingredients for the batter in a bowl until smooth with no lumps.
Heat oil in a pot to 340°F.
Dip a chicken wing into the cornstarch, shaking off excess, then dredge the wing into the batter, dripping off excess.
Fry half of the wings at a time for about 5-7 minutes, until lightly golden. The oil will drop to about 320°F.
Drain the wings and increase the heat.
Heat oil to about 375°F.
Fry the wings a second time until golden brown and crispy. Drain and set aside.
In a pan, combine all the ingredients for the sauce and stir until bubbling. Toss in the wings
